Things around here have been a little crazy so I haven’t planned anything for Cinco de Mayo this year. I’ll probably end up just eating a quesadilla and making a margarita at home (as the weather heats up I’m looking forward to making a pitcher of watermelon margaritas again sometime soon).

little by little

In the last couple of months I’ve faced the truth about my eating habits, and though I struggled a bit at first to make changes, I had a bit of a breakthrough recently. And while I am ecstatic that I finally saw the scale move in the right direction last week (I lost 1.5 pounds!), the biggest difference I’ve noticed is that I feel better (shocking, right?).

honey roasted peanut butter

When I was in 4th grade, we had to do a demonstration in front of the class. I don’t remember what my demonstration was which really isn’t all that surprising because I tend block out anything that has to do with me speaking or performing in front of others. Then again, I don’t even remember my teacher’s name.

But what I do remember is that some kid in my class did a demonstration for what he called an apple sandwich. I don’t remember the kid’s name, and I don’t remember why he called it an apple sandwich (I mean, it’s not really a sandwich, hello?). Still, I was blown away by this idea, this apple sandwich. Here it is in a nutshell: cut an apple in half and remove the core, put a spoonful of peanut butter on each half. And… eat it. Mind-blowing, isn’t it?

Anyway, let’s make some peanut butter…

mother’s day gift ideas

Mother’s Day is nearly upon us, are you ready? I think I am. Almost. I have a small, handmade gift for my mom that I will be mailing early next week. But I feel like it’s missing something.

While I try to figure out what it’s missing, here are a few ideas to brighten the days of the moms in your life…

Cook mom breakfast


Stacks and stacks of buttermilk pancakes loaded with blueberries (sliced bananas are also a nice addition). Imagine flipping them with this cheery spatula. Now imagine the smile on mom’s face.
