I started reading The Lightning Thief last week, and now I am a little obsessed. Okay, maybe a lot obsessed. I’ve already blown through the first 2 Percy Jackson books and am halfway through the third book. At this rate I will be done with the entire series by Friday. Or maybe tomorrow. (should I be embarrassed that I’m addicted to kids’ fantasy books?)

I have trouble putting books down sometimes even though I know I have other things to do. You know, things like laundry, eating, and sharing recipes with you. So while I finish reading The Titan’s Curse, you should check out the perfect roast chicken. I posted it about a year ago and it is an all-time favorite of mine. When did my blog get old enough that I can pull things “from the archives”? Crazy.

And don’t forget the best part about making roast chicken: having chicken salad the next day.

national bbq month

Did you know that May is National BBQ Month? How did no one tell me sooner? I just found out a couple of days ago and at first I was devastated. Me. Lover of all things barbecued. Has missed half of the month devoted to said love.

Then I remembered: May is just the beginning of BBQ season. No matter what the Hearth, Patio, and Barbecue Association says. Why do we need to be limited to just a month?

easy pad thai

I have had a love-hate relationship with Pad Thai for a while now. I loved it when I had it in Thailand and I hated it anytime I ordered it at a restaurant stateside. You see, the so-called Pad Thai I’ve had in restaurants has always been coated in this weird orange-colored sauce that scares me. It tastes funny too. But when I visited Thailand 7 years ago, I learned that real Pad Thai is not orange or scary. Not even a little bit.

I also learned that the peppers in the panang curry in Thailand are not bell peppers like they are over here. I learned this as the locals in the restaurant all laughed at me when I burst into flames. Well, maybe I didn’t burst into flames and maybe they didn’t laugh at me, but it was a lesson I will never forget. Peppers in Thailand are hot… even the ones that look like bell peppers.

Anyway, enough about spontaneous combustion. I was telling you about my love-hate relationship with Pad Thai. I still sometimes order it, holding out hope that I’ll find the same light, fresh noodles sans freaky orange sauce that I loved in Thailand only to be disappointed once again.

But no more. Not since I found an easy and tasty Pad Thai recipe in the latest issue of Everyday Food (which by the way is quickly becoming my favorite food magazine).

Granted, the recipe is not 100% authentic — it doesn’t use fish sauce and tamarind and the 100 other ingredients the authentic version calls for — but it is light and fresh and easy with a capital E. You can seriously have this ready in 30 minutes flat (and most of that time is just soaking the noodles). I’ve made it 4 times in 2 weeks and unless I am on a beach in Thailand, I am never ordering Pad Thai in a restaurant again.

weekend recap

As I sit here, it is almost 10:30pm Sunday night and I feel a warm fuzzy looking back on this weekend. It was full of friends and loved ones and time in the kitchen. It all started when I baked a cake

saturday morning remedies

Cheers!

So, let’s say hypothetically that you went to a party on Friday night and had a smidge too much champagne.  Maybe you woke up Saturday morning with a tiny headache and a slightly delicate stomach. Not a hangover, goodness no, nothing like that, you know better than that.  You just woke up feeling a little off. What would you eat for breakfast?

Not that I really know what that’s like. But if theoretically I drank a little too much of the bubbly and needed to feel better fast, I would first drink a lot of water or something with electrolytes. Then I would want something comforting like pizza, pancakes, or maybe mac n cheese. But first thing in the morning? I’d probably reach for what we call around here a holey egg sandwich. You might know it as a birdie in the nest, egg in the basket, one-eyed Jack, or one of several other names.

Not that I ever need a hangover remedy, but here is one of my favorites:
