For some reason, I am craving lemons. Lemonade. Lemon pie. Lemon curd. Lemon cake… lemons. Maybe it is the sunny weather? Maybe I’m deficient in vitamin C? Or maybe it’s scurvy?
Whatever the reason, here is a short list of lemony ideas to brighten your weekend:
Rosemary lemonade spritzers – You can control the amount of pucker by adding more or less of the syrup. The kids love it with lots of pucker. The adults love it with a splash of vodka.
Meyer lemon curd – spread some on a graham cracker for a flavor that approaches a lemon pie. Also good on French toast, scones, and a spoon.
Lemon custard cakes – Did you know that puffy white cumulus clouds are lemon-flavored? Seriously, it’s true. These lemon custard cakes are the proof. Lemony bites of air… divine.
A few more lemon goodies from around the web:
- Simple lemon granita from Pinch My Salt (I love that she served it in a little jar)
- Lemon icebox cake from No Recipes (something about icebox cakes make my Southern heart swoon)
- Lemon Bars from Two Peas and Their Pod (who doesn’t love lemon bars?)
- Lemon-drenched lemon cakes from Joy the Baker (Most cakes are even better when drenched. It’s a fact.)
