Giddiness

That’s right. Giddiness. I am giddy about filled cupcakes! Well, at least the promise of filled cupcakes. Let me ‘splain…

I went to Michaels today. Ah, Michael’s. It’s like a drug and I am a recovering junkie. Combine a love for crafts with a short attention span and a need to do lots of different things (but only once) and what you get is me… and a lot of seldom used craft stuff (although most things do get resurrected and redeemed eventually. It may take years like the beads and wire I bought to make jewelry and packed away after a few short weeks that I recently took out to make wine glass charms (finally! we can have a party and my friend who will not be named cannot steal my wine glass)). I kicked the habit by going cold turkey. Yep, I just stopped going to Michaels except for very rare occasions in which I truly need something and cannot find it at Target or Joanns (which is almost as bad as Michaels but only almost because I can somehow talk myself out of buying yards and yards of fabric. Well, at least at Joanns. There are a couple of stores in San Francisco that used to feed my fabric habit).

Anyway, back to my visit to MeccaMichaels. I went in with a very specific list and an extra short attention span. I was looking for mini-bundt pans (no luck), candy boxes for my caramels, and some inexpensive Christmas stockings (I was going to make stockings but waited until the last minute and the ones at Target were like $14 each and not that interesting. I would like to make stockings that are unique and fun, but at this point would rather spend my limited pre-Christmas time baking and trying to make caramel. Speaking of caramel, I tried to make round 3 tonight. I’m not sure how it will turn out because I think my candy thermometer broke part of the way through the cooking process and I had to use the old fashioned drop it in a glass of cold water test for soft ball stage. doh. I’ll update you on the outcome tomorrow).
What I left Michaels with:
- 4 Christmas stockings and gold glitter fabric paint to write names or initials with.
- candy boxes
- Wilton 3 pc. stacking cooling racks. Awesome. (I decided its time to replace my dinky cooling racks that bend under the weight of some of my glass pans)
- AND… my-favorite-most-exciting purchase of the night:

The Wilton 12 pc. Cupcake decorating kit.

I cannot begin to express how giddy I am about this purchase. Filled cupcakes. That’s all I can say. A whole new world is opening up to me. Gingerbread cupcakes filled with whipped cream. Vanilla filled with strawberry. Chocolate filled with just about anything… Armed with the Sprinkles flavor list to inspire me and the Bismark Tip 230 for filling cupcakes and eclairs, I feel the possibilities are endless. Spice cake filled with egg nog cream cheese anyone?

Candied Citrus Peel
as seen on The Small Object. They look interesting and I bet they are yummy (citrusy, sugary, … ). She also packages them in little wax bags with cute labels. I am inspired. Once I master caramels, I will try these :)

Caramel update

So round 2 is delicious, but I think I overcompensated for the burning of the first batch and undercooked it slightly. It is definitely a soft caramelly texture, but if left to sit for a while it spreads out (I cut the batch into squares and set them on parchment paper last night, about an inch apart. When I woke up this morning, they were one big sheet of caramel again). I guess this means round 3 tonight (maybe, if I feel ambitious after work today).

Caramel rescue and vindication

D. helped me save the round 1. He suggested dipping them in chocolate. I was skeptical, but melted some semi-sweet chocolate chips and dipped the slightly bitter, slightly burnt caramels in it. I also sprinkled them with some of the chocolate salt I made earlier. Wow. The result is great.

The second round of caramels are SOOOO good. so good. And when I followed through with my original plan of topping the caramels with just the chocolate salt… yum. For this batch, I skipped the cinnamon entirely and I added a mulling spices tea-bag to the apple juice as it was reducing. The only problem with this batch is that it is a little on the soft side… I know caramels usually are, but it makes it difficult for me to determine the best method of packaging.

The 2nd batch of caramels are actually CARAMEL colored! And the lingering bit left on the spatula was delicious…
